Sweet potato fries make better oven fries. They turn out more crisp and have more flavor. And since virtually everyone loves fries, these are a great alternative to the traditional potato kind. Enjoy these with a reuben sandwich or whatever pleases you. Here is what you’ll need to make these tasty treats…

  • 2 sweet potatoes cut into wedges
  • 1 tbs. Olive oil
  • Seasoned salt

1. Preheat oven to 425F.
2. Toss potatoes and olive oil together in large bowl until potatoes are coated.
3. Arrange potatoes on cookie sheet, bake for 10 minutes.
4. Flip; bake for 10 more minutes or until golden brown and fragrant.

They’re messy, they’re weird, they’re to die for - and I don’t know why. Just about everybody loves a reuben sandwich if made properly. But, frankly, the meat is just plain unhealthy. The following recipe will help you recreate this celebrated sandwich without all that saturated fat. Here’s what to do if you aren’t into the corned beef thing..

You’ll need:

  • Cooking spray
    4 slices rye bread
    Butter, for grilling bread
    4 slices Swiss cheese (reduced fat, even)
    1/4 c sauerkraut
    1/4 c yellow onion, thinly sliced
    1/4 c sliced mushrooms
    Sliced tomato
    1/4 c 1000 island dressing (lite)

1. Sautee onions, mushrooms and sauerkraut together in skillet.
2. Grill rye bread on one side; smother other side in 1000 island dressing.
3. Pile on onion/sauerkraut mix, then tomato and Swiss.
4. Melt cheese in microwave or oven.
5. Add other slice bread with more 1000 island.
